Ignore the Apple Watch stuff, and the premise is the same no matter your model
Have you ever backed up your phone? If not back it up either to the cloud or to iTunes.
If the iOS on your phone is newer than the iOS on your iPad you will need to update your ipad (just set it up as new and do the update, don;t worry about putting any data on it, the operating systems just need to be compatible).
If you back the phone up to iCloud then, in that article linked, click on the iCloud icon and it will take you to instructions on how to set the new device up from an iCloud backup.
None of the options on the page are useful. I don't have an Apple Watch and my cell is older than the one featured. Also, the data on my iPhone is not in iCloud.
