Since Catalina, nothing appears on my HD but the following folders: Applications, com.apple.TimeMachine.local snapshots, Library, System & Users. How/where can I access my graphic & other files?

As with many macOS versions before, your personal documents are probably in

Macintosh HD/Users/[your username]/Documents/

Macintosh HD/Users/[your username]/Pictures/

Macintosh HD/Users/[your username]/Movies/

Macintosh HD/Users/[your username]/Desktop/

etc.

You can set in Finder Preferences to open new Finder windows (⌘N) with a particular folder, e.g. your Home folder ([your username]).
