If I want to pay my Apple credit card monthly balance due and I want to write a check, who should the check be made payable to and what is the correct mailing address?

That is not possible to do. You can only make payments through the wallet app. How to make Apple Card payments - Apple Support

I called the phone number for Goldman Sachs (concerning Apple pay payments). They said that I can send a check.

Make it payable to:

Goldman Sachs Bank USA, Salt Lake City Branch

Mail it to:

Goldman Sachs Bank USA, Salt Lake City Branch
