iPhone 11 Pro Back Glass Replacement
Has anyone had the glass repaired on the back of an iPhone 11 Pro? I am curious if this is something they take care of in store, or does it take several days for it to be repaired?

No way of knowing really. There's a chance that they have the service replacements in store, but I've never been able to get any response about real-time inventory of any replacement item/part unless I was there at an Apple Store.
It will almost assuredly be as a "service replacement" which could be new or refurbished. The refurbs will be made of a combination of new and salvaged parts. Early in the product cycle it's most likely going to be new ones. However, it's hard to tell since it will only have a special model number that begins with an R. If you do this, most likely your damaged device will taken in and they'll reuse whatever they can and then designate it as a service replacement for a future customer.

I called in and the gentleman I spoke with said the opposite. He said that the back glass on an iPhone 11 Pro can be replaced, "Just like the glass backs of any of our other phones". He mentioned that, as long as there was no internal damage to the device, they can handle it in store.
We'll see what actually happens after my appointment tonight.

The glass and the case are fused. I've heard of some aftermarket glass replacements, but I really wouldn't trust that.
Apple simplifies most iPhone "repairs" into full replacements, whether in warranty or out of warranty (including accidental damage to the case). I won't post it here, but if you take a look at various teardown guides, you'll see how much stuff is attached to the case. It's way too much work to do in technician's room in an Apple Store. Once they receive a previously used device, Apple salvages what it can and recycles what it can't. But it makes more sense for them to have it done at a few large facilities that specialize in doing it rather than having hundreds of stores doing it.

Yes, that is the obvious thing to do. Querying the community for others that may have had a similar experience is what I am trying to do here.

Whoever you spoke to was mistaken. The back glass can not be replace on ANY iPhone. the entire device must be replaced.
