Are there limitations when using series 5 watch with GPS and cellular? Do you lose any options if that exist with the same model without GPS?

A GPS only Apple Watch will do Everything a cellular model will do as long as the iPhone is nearby.
The cellular model can leave the iPhone at home and go for a walk, run, bike ride, etc... and still make/receive phone calls, send/receive text, etc...
If you get a cellular model, it will share the iPhone's phone number, so your iPhone carrier has to support the Apple Watch, and will charge a monthly fee for this service. In the U.S. it is $10 per month added to the iPhone cellular bill.
NOTE: you do not need to activate the Apple Watch cellular, and if you do not, then the cellular model will behave just like a GPS only model.
