It is a eSIM. THere is no physical card.
The eSIM is populated by your iPhone carrier transferring the eSIM data from your iPhone to your Apple Watch when they add your Apple Watch to your iPhone plan.
If you want to discontinue your Apple Watch cellular service you contact your iPhone cellular carrier.
