I produce podcasts for other people and I'm trying to setup a separate Apple ID to submit the shows under instead of using my personal Apple ID account. How can I do this without doing the whole iTunes Store account that PodcastConnect is requiring as I don't want to take down everything on my computer that's already setup under that account?

You have to log in in the iTunes Store, have a payment method registered there (though podcasting is free) and have your computer authorised in iTunes. Probably the best way to do this is to create a new user account on your Mac and use that to sign in and to manage your podcast.
