Is there any way to tell for certain if your device is being paired to someone’s watch or air buds unknowingly? Similarly is it possible to be on someone’s family without your consent or knowledge? How would this happen and how can you check?

As far as wireless headphones, you need to select them on your phone when they are in pairing mode. For Family Sharing you have to accept the invite for Family Share.
You can see all speakers/earbuds/headphones, etc. that have been paired to your device by going to Settings > Bluetooth.
You can see if you're part of a Family Sharing group by going to Settings then select your name at the top and see if you see Family Sharing listed.

Why is my iPad still showing the phone number of my former Verizon sim despite that I have switched carriers and ph numbers days ago . I even have signed out of my cloud and resigned in and the former number still persists on about this iPad screen?
Try removing it from your Apple ID after your have turned off iMessage & FaceTime.

Your device cannot be paired to any other device without your cooperation.
And you can’t be added to a family group without your accepting the family request.
You didn’t erase the number in Settings. I’m not sure where it is on an iPad, but if you open Settings and search for “My Number" you will probably find it. It’s in Settings/Phone on an iPhone.
