I understand you'd like to create a signature to use in Pages. You're able to create a signature via Preview, for use in PDF documents.
Fill out and sign PDF forms in Preview on Mac
Perhaps you can then create a screenshot of the signature you created for Preview, and insert the screenshot in your Pages documents.
