There are lots of things you can do in the Accessibility section of System Preferences that can help - things like zoom and others like using keyboard in place of mouse (by using arrow keys), etc Just do a little exploring in that System Preferences pane and you will likely see several adjustments that might help your Dad.

iMac - Official Apple Support is a good place to start. Configuration for a "senior citizen," is a nebulous term. Perhaps that link may help you define what you are looking for.

Ok first are you familiar with creating configuration profiles
No but if you point me in the right direction, I'm sure I can figure it out.

Actually yes that is great
As simple as possible. My father basically uses email, an internet browser, MS Word and Sonos. He also saves everything to the Desktop. He has issues using a mouse. He only needs to be able to left and right click.
