iPad Air 3 International Differences (China)

Hello,

I'm currently living in China and wanting to buy a new iPad, probably the Air 3. I will mainly use it for digital illustration, as well as a second 'laptop'.

Are there any differences with the ones sold here vs. UK/USA? (I know of some small things to do with Chinese territories)

Will I have any trouble using it in English? Is there anything I won't be able to do with a Chinese iPad? (outside of anything Google being obviously blocked)
