You can try and see if this older version of iTunes still works with the version of the macOS you are currently using.
Make sure you make a copy of your current iTunes library to a different location on your Mac before testing this vetsion of iTunes.
This special version of iTunes still saves the actual apps files within iTunes to your computer and still organize apps for the iPad Home screens, like earlier iTunes versions used to do.

That option has been removed with recent updates to macOS/iTunes.
I found that feature to be helpful after one restore, but only once in 10 years, so I can live without it. You can always let Apple know about your desire by submitting: Feedback - iPad - Apple

I do have to say it's pretty stupid. Is apple trying to make their products less user friendly? I don't understand the purpose of this. Oh well.
