I just type cmd-space, Fo, and hit return. Your mileage may vary on the number of letters of "Font Book" you need to type to have Spotlight find it.
You can also open the Applications folder.
Or, you can open the LaunchPad and search for it there.

I haven't changed it, either, and it is cmd-space bar.
But, if you use multiple input sources, that shortcut will change input sources instead of invoking Spotlight.

Mac keyboard shortcuts - Apple Support
It does say that, but Apple changed the default shortcut for changing keyboard to Control Space back in El Capitan.

Mine never changed and I've never had multiple input sources.
Resetting to Defaults does not change it to ctrl-space. Still Cmd-Space like the Apple article explains.
I haven't changed the default Spotlight shortcut on High Sierra, or Mojave, and it is control-spacebar. Might be a good idea to use the string "fon" in case any file on your Mac is named Foobar.
The other approach:
Dock : Launchpad : Other, and single-click on Font Book.
