How can I get past the incompatible version requirements of the apple watch and iPhone 6?
My iPhone 6 (model A1586) is meant to be supported - but attempting to pair with a watch makes it demand an upgrade to ios13 which doesn't exist.
Looks like it's a bug in the watch install in which even they don't understand the logic of which phone supports what.
Can I persaude it to stay on watch os 5?

If your Watch is currently running watchOS 5.x just leave it there and don't update it.
No that's not the problem. I'm simply stuck at the pairing stage with the options of upgrade the phone (which won't work as it already 12.4.4 and there's no 13 available) or cancel pairing. There's simply no option to just use watchOS 5.
The current shipping Apple Watch Series 3 and 5 come with watchOS 6 which requires an iPhone 6s, SE, 7 or newer running iOS 13. The iPhone 6 cannot be upgraded to iOS 13. Strongly suggest returning your Apple Watch for a refund.
