Someone signed in to my Apple account and I got a verification code sent to my phone but this was not my doing. What do I do now that I changed my password? Is there a way to report this activity?

There is no where or way to report it. You did the right thing by changing the password, and the use of 2FA would have kept them out anyway, so you’re good.

Regain Account Access and Secure it:
Perhaps using a new eMail address would be best here. If you think your Apple ID has been hacked, then by all means, it's best to modify your login credentials (Assign a new email address and use a new password).
