With the cellular connection for Apple Watch, could you use the watch with metro pcs ?

The Cellular Apple Watch shares the iPhone's phone number, so the carrier must be capable of sharing the phone number, and willing to offer this service, or if they buy cellular capacity from another carrier, then contractually allowed, or if they are a subsidiary of a carrier, the carrier must be willing to offer that service on their subsidiary (some carriers only offer Apple Watch support on their higher priced iPhone plans).
