Hello scrapn4six,

Thank you for using Apple Support Communities!

I understand from your post that you are trying to change your subscription plan for Office 365 to an annual plan but are only receiving the option to cancel. If you are not seeing any other options available and are using the steps from this article to manage your subscription, you may need to contact Microsoft directly for additional assistance.

i don't know if what I am going to say is accurate, but I suspect that you must already have a Microsoft Office ID number, and if so, it will likely be listed on the Microsoft web site where you can manage your account. Office 365 allows you to install the apps on several devices, deselect a device and add a new device. So I suggest you find your original Microsoft number you used to activate the apps and then try using it to log on to the Microsoft site. You may have to set up an account there using your email address plus whatever else they ask for. In summary, use the Microsoft site to manage your account and devices. You may also be able to change the billing method as well. Good luck.
