Syncing and backing up iPhone and iPad to MacBook without iTunes

I update my iPhone and iPad via my MacBook, backing up onto it first. How do I do this without iTunes?

If you've recently updated to Catalina see What happened to iTunes? - Apple Support, otherwise (re)install iTunes on your Mac.
