Today is Thursday Jan. 2, 2020, and my Apple Watch is displaying Wed. 1 on the face ... my iPhone 8 is correct and my MacBook Pro are correct and they are all paired and connected ...
anyone else have a Y2020K problem?

What troubleshooting have you tried? Do you have the Watch set to mirror your iPhone for Language & Region? Try a reset on the Watch, press and hold the Digital Crown and power button together until you see the Apple logo and release. The Watch should reboot.
Try a forced reset;
To force reset your Apple Watch, press and hold both the side button and Digital Crown for at least 10 seconds, then release both buttons when you see the Apple logo.
