Can I trade in a new iPhone 8, brand new and still sealed for the new iPhone 11 Pro Max?

You can. Apple Store will need to open up the box and inspect for damage and condition of the iPhone 8. You will get up to $220 for trade-in toward your new iPhone purchase.
