There is no way to do what you are suggesting, a restore from a backup is all or nothing and you cannot restore from multiple backups. You would need to manually transfer the data that is on your iPhone 5 to the older iPhone 7 then use that phone for the transfer/backup

I'm trading/transferring my i7+ to a "new" i7 (smaller version).

I also need to transfer an i5 to my "old i7+.

Would the order be: to transfer my i7+ to new i7 (small).

Then will the old i7+ still be able to transfer from the i5? ie what's the status of the i7+ after its contents has been transferred?

Or will I have to use another method?
