reset >erase all content and settings
My iPhone 5S is asking for a passcode when attempting to reset> erase all content and settings. The phone doesn't recognize any of my possible passcodes . How do I override?

Do you have any restrictions turned on for the device? If so, then you need to put the device into Recovery Mode and wipe it with the computer. See this, If you forgot the passcode for your iPhone, iPad, or iPod touch, or your device is disabled - Apple Support
