SMS/MMS requires the iPhone for both GPS only and Cellular Apple Watch models. The differences is that the GPS only needs to have the iPhone nearby. For Cellular the iPhone just has to be powered on and connected to the Internet so that the Apple Watch can find it (anywhere in the world) to pass along the SMS/MMS information.

Internet messaging services, such as Apple iMessage just need an internet connect, which could be WiFi for the GPS only models. The Cellular models can just use their cellular data connection.
