How can i turn off my two factor authentication on my phone?

If you've had it enabled for less than 14 days, you can turn it off using the link provided in the enrollment confirmation email. If you've had it enabled for more than 14 days, you cannot turn it off.

For most people, changing phones and carriers doesn't involve changing phone numbers. But, if it does, yes, you need to update the number. You should also have additional trusted devices or numbers. I use my work phone number as a trusted device. I can get a code called to that number.
You need to do that or if you get a new number, you need to update the number on your Apple ID.
