How can I alphabetize my app folders?

You would have to do that manually. The home screens are not configured to be alphabetized. You can provide feedback to Apple if you would like to see that feature by going here, Feedback - iPhone - Apple

App Folders cannot be alphabetised. But apps can be, but note, this will remove all folders.

Settings > General > Reset > Reset Home Screen Layout
