Why can't I airplay from my iphone to my mac?

I want to take product photos on my iPhone but see them on my mac as I go to be able to see them on a full screen, just as photographers do by tethering a camera to a computer. how can I mirror my iPhone screen to my MacBook?

macOS does not natively have an Airplay receiver application.

An internet search will give you some 3rd party options.
