If not, do the official resellers in Ukraine accept Apple Gift Cards?

They probably do but this is a technical forum and the people who would know what type of payments the physical store took would be the physical store.
You will have to call them and ask.
I have been to that page. It seems as though Odessa only has resellers.
Do resellers accept virtual Gift cards to pay for a new phone?
