Activity Monitor Columns are gone?
I've tried to delete the file V~/Library/Preferences/com.apple.ActivityMonitor.plist but I can't find it as an option. I can't find the file. Any suggestions?

Are you sure you are in the user Library?
The ~/ means "user home directory"
To get there, hold down the Option key and choose Library from the Go menu in Finder.
