Employee was fired and escorted from building, devices are activation locked, how can I get the activation lock off, obviously the previous employee isn't an option.

I strongly suggest looking into a Mobile Device Management platform or configurator for managing devices. It can allow you to remove Activation Lock in these instances. Also, I would look into Apple Business Manager. It is free, and when you connect it to your purchasing account at Apple, B&H, CDW, etc, devices that are enrolled have automatic proof of ownership so you don't have to worry about the receipt.
If they're company devices, supply Apple with their original purchase receipts, or use Apple Configurator if they're managed by it.
If they're the employee's personal ones, you can't.

iPad was bought years ago with my company cc, those receipts and reports are long gone.
