Sidecar, Apple Pencil, Adobe apps, gestures and pressure sensitivity

I'm trying to use Sidecar and an iPad Pro with the latest 2020 versions of Adobe Illustrator or Photoshop to produce a series of line illustrations that require pressure sensitivity. Sidecar itself and the Apple Pencil work fine, but there are issues.

Photoshop can draw with pressure sensitivity but none of the gestures work (scroll, zoom in/out)

Illustrator can use the gestures above but the brush tools don't recognise the pressure from the pencil.

In addition, the two finger scroll in Illustrator moves in the opposite direction to your fingers which is counter-intuitive.

Any thoughts?
