Run this on a Windows Virtual Machine:
If you have a desire to use iTunes on your Mac, sure use Windows. However, use a Virtual Machine, and then run the Apple ID off of that, while your macOS is running itself in the background. Virtual Machine Programs are VMWare Fusion and Parallels. Basically, it is Windows-in-a-window.
Also, Provide this as Feedback to Apple.
Inform Apple of your desire to stick with iTunes. The more they hear of this opinion, the more they'll consider it in time to come.

iTunes is still available for Windows.
But more to the point, if you don't have a streaming subscription, Music is not actually that different from iTunes. if you encounter a specific issue, pls post and perhaps the community will have a solution.
