The distributor is mistaken.
The eSIM functionality is built in to all current iPhones sold everywhere in the world except China, and cannot be simply diasbled.
The issue is that very few carriers in Latin America actually support it.
Chile (Movistar), Argentina (Personal), Brazil (Claro), Colombia(Movistar) and Mexico(AT&T) are the only latin american countries with carriers that support it and even then its only on a specific carrier in those countries, not all of the carriers available there.
So the use will be limited.
The eSIM will be in the iPhone and functional, if you can find a carrier that supports it when you travel.
