How do I get rid of Icloud and retrieve my data?

ICloud has made a mess of my macs. How do I get rid of it and get my data back? If I just unclick Icloud in preferences there is nothing left on my mac Mini

Turned off iCloud and everything gone I know I sound stupid but I'm lost. I turned off iCloud and everything is gone from my Mac book Air 2020 M1. Deleting icloud on mac without affecting another I need to wipe a Mac Mini to new status, but I have iCloud desktop. If I delete anything there, it deletes form my MacBook Pro as well. HOW DO I Clean one without affecting the other? Thanks in advance for your help...

Archive or make copies of your iCloud data

Then turn off iCloud syncing.
