What's the best way to stick it to the person who stole my computer?

After being missing for months, my computer just showed up somewhere in Texas on iCloud.

How do I make it so a thief cannot use my device? If I erase the computer remotely, will it be reset to factory settings and make it a fresh new computer for this person?

Is it better to lock the computer so they can't access it any more? I'd ideally like it erased and locked

After you erase a device, you can't track it. If you remove the device from your account after you erase it, Activation Lock will be turned off. This allows another person to turn on and use your device.

And as per this article https://support.apple.com/en-in/HT204756

You can use Find My to mark your computer as lost, which remotely locks it with a passcode. You can also display a custom message on its screen.

So , the best way is lock with a passcode the person can't use the Mac / erasing and locking works separately .
