How can I get deleted files more than 30 days after they were deleted?

My important files are gone from my desktop and iCloud somehow and I’m guessing they were permanently deleted by accident. I’m assuming it’s been longer than 30 days and that’s why it doesn’t show in “restore files” in iCloud. How can I recover these? I can’t imagine they are truly “gone”. Please help
