I think a knight would be cool

I think a knight emoji would be cool and that some schools mascots have a knight to represent there schools so I think it would be cool to have one. With a horse also

Apple does not get to unilaterally define new Emojis. You can propose the new emoji to the organization in charge of defining them at: https://unicode.org/emoji/proposals.html

Apple doesn't create emojis. That is Unicode Consortium.
