I have an iPhone 11 pro max but I like to use my iPhone 8 Plus still. I charge my iPhone 8 Plus with the 11 pro max charger because it charges way quicker but, my iPhone gets really hot. Is this normal? Or should I use my regular charger with the 8 and only use my 11 pro charger with the 11 pro.

iPhone 8`s and later were made to be fast charging capable, apple just never included a fast charger in the box before the iPhone 11 Pros. Using the fast charger should not have adverse affects on the your 8 Plus since it was designed to be capable of fast charging.
It might be overheating due to the case. It is normal for it to get warm while it charges especially if the phone is in use. You should only worry If it gets hot when it's not been in use.

That's normal. The other charger probably has a higher voltage/wattage running through it which your 11 was designed for but the 8 was not. You could continue to use it, it might affect the battery life in the long run but you'll be fine.
