Since I upgraded to Catalina, the text size in Messages is smaller. I can't increase it in Preferences--the text size font is gray out. While I can select DEFAULT, the change doesn't take effect.

Boot into Safe Mode (Use Safe Mode to isoloate issues with your Mac) and try setting the font size from there. Click on the menu even though it appears greyed out:
