Today I received my new AirPods Pro from Apple (after a 5 week wait).
I cannot connect them as a device to the Spotify App on my Apple Watch Series 5. They do work for phone calls and whilst playing Apple Music.
To listen to Spotify without my phone present was the sole reason that I purchased the AirPods Pro.
Am I doing something wrong or are they not compatible?

The Spotify Apple Watch app is just a remote control for the Spotify app on the iPhone.
Spotify has not released a way to listen to Spotify on the Apple Watch.
