How is it possible that such a simple thing as sending an email later seems to require a separate app? Shouldn't this be available in Mail? Or am I missing something?

I've been using computers for 30+ years. I have never had the occasion or reason to send an email "later". That doesn't mean you don't. However, most email providers don't offer that option in webmail either. If you need to send an email later, create the email, don't hit send and leave it in the "Drafts" folder. Then when you're ready to send it, select the email in the "Drafts" folder and send it then.
