Where has "Show All Devices" gone in Catalina?

Trying to install a new SSD on my MacBook Air and have been advised it needs formatting from within Disk Utility. Previously one would have used View | Show All Devices to access the new SSD, but this option is nowhere to be seen in the Catalina version. How do I do this?

OK, cracked it: You have to enter Recovery mode by holding down Command+Option+R on booting. The SSD manufacturer's instructions were telling me just to hold down Option, which appears to take me into the Yosemite installation that shipped with the Mac. Yosemite also doesn't have drivers for that SSD, which is why I didn't see the SSD.

I don't know what version of Disk Utility you are showing on your screenshot, but the Disk Utility window has not looked like that for several versions of macOS now. What you are showing is an old version of Disk Utility from an older version of macOS or OS X. The version you are showing is not the Catalina version. That is why you can't find "Show All Devices". It does not exist in the Disk Utility version you are showing. The Catalina version of Disk Utility is 19.0 (1704).

The version of Disk Utility you are using does not have the Show All Devices selection because any OS previous to macOS High Sierra showed all devices by default. If your SSD is not showing in Disk Utility you have not installed it correctly.

When you booted your mac up after installing the SSD did you get a dialogue explaining that the Disk was not readable by the mac with options to Initialise, Ignore or Cancel.
