Since last summer (Snow Leopard, AirPort FW or whatever) I've had irregular drop outs. My set up is a single band Time Capsule (early 2008, draft N wifi) as router and 2 newer APX. I've had drop outs when streaming from both MBP and a Mini, but often when the Time Machine backup starts, as if the TC doesn't have power enough for it all. Often other family members complained about lagging wifi network, apart from the music drop outs. Interference from other networks isn't the problem for me. I've got the TC replaced once, but still with the same problems.
Anyway, a few weeks ago I changed wifi settings on the TC to "G" only, instead of B/G/N, hindering the TC from trying to speed up when there's always some client that's only capabel of running G-speed. This took care of both the drop outs and, oddly enough, the speed problems. So until I'll get a dual band base station or N on all clients I'll stick with the G-speed only. Not as high top speed, but higher average speed - and no drop outs for weeks now! Worth trying?
