How do I subtotal data in Numbers

I'm looking for an easy way to do this, like in Excel - if that's possible. I used to use Categories, but that seems to have got dumped when desktop excel got dumbed down to fit on iOS

Numbers has categories.

Here's a table with some made up data. Enable categories by opening the "Organize" segment on the right, then select "Categories", then choose the column



Enable Categories by clicking the slider:


Select a cell in the head for each category to see the sprocket:

I added a column for "Count" then added the subcategory for Count
