Hacked email address that is used for Apple ID

If someone has hacked my gmail email that I use for my Apple ID can I change my Apple ID? And would they be able to access my phone if I did change it.

You can try changing it using the links below. If you make the change, they would need to know the new address to access your data. Note the restrictions in the article.
