I can't find special letter-A with diacritic "ogonek" Ą-ą.

Hello, I am learning to type in Polish and found a quick way to enter special letters 
of the Polish alphabet (long hold of the key), BUT
I found how to enter all characters except one-A with polish diacritic ą.
There is E with polish diacritic-Ę( number 7 ), 
but No A with polish diacritic , where can I find it, or configure it?

To make that character you need to use the Polish keyboard included with MacOS, or the keyboard called ABC Extended. Or you could create a shortcut for it in system preferences/keyboard/text/replace with. Or you could use the Character Viewer.

Another option would be to make a custom US layout which adds that character with Ukelele.
