Can I store iCloud backup for my iPhone XS in my Macbook pro to restore it from it?

You can't store an iCloud backup on a Mac (they are stored in iCloud) but you can use Finder on a Mac running Catalina (or iTunes on a Mac running an earlier OS) to backup the iPhone and the backup will be stored on your Mac.
