My ipad was stolen and it's pending erase - Do you advise I remove it from my account before knowing if it was completely deleted?

I wouldn't do it before or after or ever. See the following from If your iPhone, iPad, or iPod touch is lost or stolen - Apple Support
If you remove the device from your account after you erase it, Activation Lock will be turned off. This allows another person to turn on and use your device.
