What should I do to get epic games luncher to update?

You may have better luck getting an answer by contacting Epic themselves for support. It could always be a problem with the Epic software itself or the Epic servers.
Until then try rebooting the computer. Run Disk Utility First Aid on the drive.
If you have any anti-virus or cleaning apps or other third party security software installed, then uninstall them by following the developer's instructions as these types of apps may be interfering or causing problems.
Try booting into Safe Mode and updating the Epic launcher.
