There is a huge demand by users for greater security in order to protect sensitive information and/or conform with the security requirements of employers. Apple is simply responding to the needs of its customers.
You may not need all this security. However, you did have the option not to enable 2FA but once you did you are now locked in. You are free to tell Apple how you feel at Feedback - Apple Support. You will not get an answer but all customer comments are read by Apple. This does not mean anything will change. That will depend on how many reports Apple gets versus the increasing need for added security to safeguard private information, prevent identity theft, and keep prying eyes out of your life.
