iMessage and storage on iPhone
I’m finding that I’ve got quite a lot of old messages stored unnecessarily on my device - around 5GB. Is there a way to keep them in iCloud but not on my phone? Don’t really want to delete them.

No, sorry. You can sync them to iCloud, but they are not deleted from your iphone, so you do not have any benefit in terms of space.
